Yes that was also my concern (the video being a bit older). I have received Florent his contact details through a private message exchange on the matra passion forum with one of the people who helped design that board. I contacted him and got a repy the same or the next day. I believe he makes them to order through his company or the company he works for Elecflo in Belgium. I paid a little over €200 because I asked for a B2B invoice. (I use the Murena as a company car) For private individuals the price is a little lower.

OK, thanks for your reply Grapes. That clears things up now, if they are only made to order. In a similar way, I would only do those modified boards to order now, although I do usually have one already converted so the turn around can be quite quick.
I find sales of all the parts I usually kept, have slowed quite a bit these last couple of years, with the cars now being over 40 years old and with limited numbers on the road it's not surprising really. Consequently I don't hold that much stock any more as it ties up a lot of value and requires storage, so making things to order is more sensible for small concerns like mine.
